Bagels



Bagels


Ingredients:
14 pieces

About 11-12 dl wheat flour special
50 g fresh yeast
2 tbsp salt
4 1/2 dl water
50 g of margarine

For cooking
2 liters of water
Salt to lightly salted water

Garnish
sesame seeds or poppy seeds

Directions:

Crumble the yeast in a bowl. Melt the water to about 37 ° C. Pour the water over the yeast and stir it out.

Melt the butter. Mix flour and salt. Mix the liquid with yeast and butter in the flour and work the dough for about 5 minutes, it should be quite firm. Allow the dough to rise for about 10 minutes under the baking cloth.

Pick up the dough on a floured bench and work it together with the rest of the flour. Divide the dough into 14 pieces for 14 bagels. Roll out each piece about 25 cm long. Shape into round wreaths, tie the ends together with some water.

Place them on floured baking sheet paper. Allow to rise for 30 min. Set oven to 200 ° C.

Boiling: Boil the water with the salt in a saucepan. Carefully place 2-3 pieces of bagels at a time into the boiling water. Let simmer for about 4 minutes. Turn them once in the meantime.

Garnish: Pick them up with a hollow spoon and place them on plates with baking sheet paper. Sprinkle with sesame or poppy seeds.

Bake in the middle of the oven for about 20-25 minutes. Let cool on grill.

If you do not want to cook them, you can just let them rise on the plate, brush with water and sprinkle over sesame or poppy seeds and bake in the oven.

For serving: Feel free to serve them with cream cheese and smoked salmon, boiled egg, ham, cheese, cucumber and tomatoes, yes everything you like.

If you want a spicy flavor on your bagels, add 1 teaspoon of aniseed dough to the dough.

Caramel Buns in Roasting Pan


Ingredients:

Dough
50 g yeast for sweet doughs
150 g margarine or butter
5 dl milk
1 dl granulated sugar or white syrup
1 egg
0.5 tsp salt
11 dl flour

Filling
1 dl light syrup
1 dl granulated sugar
1 dl heavy cream
2 tablespoons margarine or butter
1 pinch of salt, about 0.5 tsp
1 egg for brushing
granulated sugar


Directions

1. Filling

Start with the filling. Mix syrup, sugar and whipped cream in a heavy-bottomed saucepan.
2. Allow the caramel cream to boil vigorously for 10-12 minutes. Stir so the mixture does not burn.
3. Set to cool slightly.
4. Add the margarine or butter and a little salt to the cream before time to solidify.
5. Stir to mix all well.

6. Dough

Crumble the yeast into a bowl.
7. Melt the margarine or butter in a saucepan.
8. Add the milk and let the liquid become lukewarm.
9. Pour a little of the liquid over the yeast and stir to dissolve the yeast.
10. Mix in the rest of the liquid, sugar, eggs, salt and all the flour.
11. Work together to form a dough and knead it for a while in the bowl. Dough should be sticky. Do  not add more flour.
12. Let the dough rise for 30 minutes.
13. Pour the batter into a greased roasting pan, 30 x 40 cm.
14. Push out over the pan using a floured hand.
15. Make deep holes in the dough by the back of a teaspoon, There shall be many holes about 40-50 pieces.
16. Fill the holes with a teaspoon of caramel cream.
17. Preheat the oven to 200 degrees.
18. Allow the cake to rise for 15 minutes.
19. Brush with beaten egg and sprinkle with granulated sugar.
20. Bake for about 15 minutes.
21. Allow the cake to cool. 
22. Cut the cake into squares.

Gogosi - Romanian style doughnut



Gogosi is made in Romania for Christmas, Easter and special holidays.


Ingredients
2 eggs
2 tablespoons butter, melted
1/3 cup sugar + 1 teaspoon
Zest of one lemon

For frying
3 cups of oil for frying

For decorations
2 cups of icing sugar (to dust doughnuts)
Vanilla sugar

Directions:
Mix the yeast, warm milk, one teaspoon of sugar, and one teaspoon of flour in a small bowl and set aside to activate for 5 minutes.

In a large bowl, combine eggs, the remaining sugar, lemon zest, and melted butter.

Add yeast mixture and slowly incorporate the flour, until the dough is well combined.

Gently flour your workspace, and knead your dough. Place the dough in a clean bowl, cover with a tea towel, and allow it to rest for 20 minutes.

Once the dough is rested, separate it into four sections in order to make it easier to work with and roll the dough out about ¼ inch thick.

Use a medium-diameter glass to cut out circles, or another cake cutter.


Heat about 4 cups of oil (about 3” deep) in a large pan to ~350 (F) degrees.

While the oil is heating, combine vanilla sugar, and powdered sugar in a separate bowl (this is for sprinkling your doughnuts).

Place a few doughnuts in at a time, allowing them to fry for about a minute on each side. Once the doughnuts are golden brown, remove and place them on paper towel lined tray.
 


Allow the doughnuts to cool down for a couple of minutes, and you can either roll them in icing sugar, or use a sieve to sprinkle them lightly before serving.

Ukrainian Vegetable Burgers



Ukrainian Vegetarian Burgers

Easy and fast to make

Carrots shredded
Cauliflower shredded
Cabbage shredded
Spring onions shredded
Garlic shredded

Mix with some egg and add salt, pepper, other spices you like.

Fry in a frying pan in a little olive oil.
